Kickass Prawn Cocktail


  • 300 g Wild Caught Queensland Cooked King or Tiger Prawns whole
  • 200 g raw Queensland Sea Scallops (these can be part cooked if you prefer)
  • 20 g Tomato Ketchup
  • 1 teaspoon Tabasco sauce (add more if you like it spicier)
  • 1 teaspoon Worcestershire sauce
  • 50 ml tomato juice
  • 25 ml lime juice
  • 50 ml orange juice
  • 1 ripe avocado, diced
  • a few coriander sprigs, chopped


  1. Peel all the prawns and chop the sea scallops.
  2. Mix the ketchup, Tabasco sauce, Worcestershire sauce, tomato juice, lime juice, and orange juice in a mixing bowl. Season adding more Tabasco if you like it real kick ass.
  3. Fold in the seafood and some cubes of avocado, being careful to mix it in gently so it doesn't go mushy.
  4. Spoon into bowls or glasses and add some chopped coriander cress on top.
