Ingredients
  1. Half a fennel cored and diced
  2. 2 potatoes peeled and diced
  3. 1 onion diced
  4. 1 stick of celery diced
  5. 2 bay leaves
  6. 1 tablespoon dried thyme
  7. 1 teaspoon salt
  8. 1/4 teaspoos of both pepper and cayane pepper
  9. 1 bottle clam juice
  10. 1 cup whipping cream
  11. 3 tablespoons of corn starch
  12. 675 grams salmon fillets cut into 2 cm chunks
  13. 225 grams of peeled medium king prawn meat raw (Always at Aussie Seafood House's)
  14. 15 Queensland Sea Scallops
  15. 1/4 cup of fresh parsley
Instructions
  1. 1. In a Slow Cooker, combine fennel, potatoes,onion, celery, bay leaves,salt, pepper,cayanne pepper.
  2. 2. Stir in the clam juice and 2 cups of water. Cover and cook on low until fenel and potatoes are tender, about 8 hours.
  3. 3.Discard the bay leaves. Whisk cream with cornstarch until smooth and then stir into the slow cooker. Stir in the salmon, Prawns and scallops.
  4. 4. Cover and cook on high until slightly thickened and fish flakes easily when tested with a fork, about 30 minutes. Gently stir in the parsley.
  5. 5. Ready to Serve.
